Simon Tam has been at the forefront of the wine industry in Asia for over 30 years. Simon founded the Independent Wine Centre in 1994 for Hong Kong, Macau and Shanghai. He is the founding chairman of the Greater China Wine Critics Association and co-founded the Cathay HK IWSC For almost a decade, Simon held the senior position as Christie’s Head of Wine for Asia and an accomplished auctioneer. Simon is the founder of FLAVOUR COLOURS, an intrinsic tool of food and wine marriage.
